He was named one of top ten Sommeliers of the year in 2013 by Food and Wine Magazine. David owns Portland’s first and only bar that features exclusively champagne and sparkling wine. Ambonnay and David Speer have been featured in USA Today, Food and Wine, Wine Spectator, Bon Appetit, Sunset, Imbibe Magazine, Portland Monthly, Eater.com, The Oregonian, MIX Magazine, Portland Business Journal, Willamette Week, and Oregon Wine Press. Ambonnay was recently listed in Thrillist as one of 21 top wine bars in America and the Oregonian listed it as one of Portland’s 10 best wine bars. Champagne Basics - David will present this class with a focus only on Champagne (no sparkling wines allowed!). We’ll taste and discuss the differences between non-vintage and vintage, blanc de blancs and blanc de noir, dosage levels brut vs extra brut, and different styles of rosé. It’ll be a great time, and will help you get a good understanding of what’s all going on in Champagne. During the evening we'll taste and enjoy 7 Champagnes. We will also have available French themed hors d’ oeuvres and pastries catered from La Maison Le Jardin Kimmer to include: Wild Mushroom and Carmelized Onion Tart Pork Tenderloin Medallions with Sage and Dijon Mustard Sauce Cucumber Rounds with Smoked Steelhead and Herbed Crème Fraiche Seafood Stuffed Gougeres Olive Tapenade, Assorted Cheese and Toasted Baguette Assorted Pastries: Macaroons, Fruit Tarts and Madelines We have attended one of David’s classes before and even if you think you have a basic knowledge of Champagne you will come out knowing so much more.
